Recipes


I created some of these meals as a single gal when I was in college, and also throughout the years alongside my now husband! 

These recipes are designed specifically for busy people who want to be somewhat healthy :)

I hope you guys enjoy!



1. Couscous & Eggs





You need:

1. 1 box of couscous (herb chicken is the best)
2. Two eggs
3. Cilantro
4. Frank's Red Hot
5. Meet of your choice or no meat! (I added potatoes & sausage just to see what it would taste like) It wasn't bad! But I would definitely just keep the recipe like it is.

Prep time: 10 min




Directions:

1. Bring couscous to boil, serve on a dish
2. Cook the eggs (either scrambled or over-easy)
3. Chop some cilantro for garnish/taste
4. Top it off with some Red hot
5. Boom!

*If cooking with meat; for instance steak, fry in a pan with some onions and irish butter :)


2. Steak Tacos (One of our favorites)



You need:

1. Thin steaks
2. Lime
3. Yellow onion
4. Cilantro
5. Corn tortillas
6. Rice (Either homemade white rice or Uncle Ben's cheesy rice!)
7. Taco seasoning
8. Kerrygold Irish butter

Prep time: 30 min




Directions:

1. Cook meat in taco seasoning until meat is tender.
2. Sautee some onions with irish butter in a different pan
3. If making homemade rice, start rice before everything else so it's done by the time the meat is cooked)
4. Warm up some corn tortillas
5. Serve a little bit of each ingredient on tacos
6. Boom!


3.  Homemade Hot Wings 


You need:

1. A tray of chicken wings (or drumsticks)
2. Frank's Red Hot
3. Raw Honey

Prep time: 1 hour

Directions:

1. Wash chicken wings
2. Marinate with salt and pepper
3. Place wings on an oil-sprayed cookie tray
4. Cook until no more blood comes out

Hot Wings Sauce:
Mix half honey and half Red Hot in a mixing bowl

Broil:
When wings are fully cooked on both sides and inside, broil them for about 7 minutes.
Dip in sauce and serve!


4. Costa Rican Tuna Salad 


This is Alex's favorite! You can either have it as a tuna sandwich, eat it with crackers (like Costa ricans do) or as a side dish.

You need:

1. Cilantro
2. Drained tuna
3. 1 tomato
4. Mayo
5. Onion

Prep time: 5 min

Directions:

1. Dice some onions (1/4 cup)
2. Cut half of a tomato, and about 5 cilantro leaves
3. Open a tuna can, drain.
4. In a small mixing bowl combine onions, half of a tomato, cilantro, and tuna.
5. Add a big spoon of mayo.
6. Mix it all together and enjoy!

*Tip: You can add a hard boiler egg to it for some variety! Also instead of tuna you can do salmon and it's just as good!





5. Costa Rican Breakfast "Gallo Pinto"



This recipe varies throughout different regions in C.R. Some people use a sauce called "Lizano" which gives it an excellent taste, but it is not required. Some people even add bell peppers, or different meats like sausage or steak.

This is how I make it:

You need:

1. White Rice (Most preferably Jasmine Rice and made in an actual rice cooker)
2. Black beans (Since I am not a fan of making beans from scratch, I use a can of black beans and the difference isn't that notorious.
3. Onions
4. Vegetable oil

Options for sides: Eggs (any style), avocado slices, fried white cheese, toast with butter and jelly, plantains (like shown in the picture, most common side), sour cream (also very common), or cottage cheese!


Prep time: Anywhere from 15-30 minutes.

Directions to make white rice in a rice cooker:

1. Add 1/4 vegetable oil to the bottom of the rice cooker pan
2. Depending on how much rice you want to make, you can choose between 3 and 6 cups (For 3 cups of rice, you only need one can of beans)
3. Put rice in a mixing bowl. Wash rice under lukewarm water, drain.
4. Add drained rice to the pan.
5. Add water relatively to the amount of rice you added. Ex. 3 cups of rice = 3 cups of water.
6. Add salt to taste, close lid and let it cook until it's done.




Gallo Pinto Mix:

Once the white rice is ready, it is time to make some Gallo Pinto!

1. In a skillet, cook some onions in vegetable oil until they reach a golden color
2. Add can of black beans and mix with onions for 1-3 minutes.
3. Add white rice and mix it all together. Bring to low and cover with a lid.
4. Gallo Pinto should be ready in about 7 minutes!


6. Easy Homemade Indian Food 


This one is one of my favorites because it doesn't take too long to make.
You will need:

1. Basmati Rice or homemade white rice
2. Chicken Breasts
3. Chicken Tikka Masala mix


Directions:

1. Marinate chicken breasts with salt and pepper on both sides
2. In a skillet or dutch oven, cook chicken breasts on low until fully cooked
3. Add Tikka Masala mix and stir.
4. Serve on top of rice and enjoy!










7. Steak and Gravy on Top of Mashed Potatoes

Alex conquered my heart with this one!
You need:

1. Can of green beans
2. Homemade or pre made mashed potatoes.
3. Steaks (Sirloin or strip)
4. Brown Gravy Mix
5. Bacon bits
6. Kerrygold Irish Butter


Directions:

1. Marinate steaks with steak seasoning or salt and pepper.
2. Fry steaks in a pan with butter (according to your preference)
3. On a separate pan, start the gravy mix.
4. Open can of green beans and add on a small saucer pan, add butter.
5.  When steaks are done, cut in strips and serve over mashed potatoes.
6. Mix green beans with bacon strips and serve on the side.
7. Add gravy on top of the steak
8. Enjoy!









8. Beer Brat Dawg   







This is an imitation of the best hot dogs we tried when we were in school. The person used deer meat though, so that's kind of hard to beat. Our secret is using beer brats!

You need:

1. Beer Brats
2. Philadelphia cream cheese
3. Onions
4. Kerrygold Irish butter
5. Hot dog buns
6. Sides (mac and cheese or mashed potatoes) Either homemade or pre made!


Directions:

1. Boil brats in a small saucer pan. (This will allow to cook faster on the grill and avoid drying them)
2. Once brats have acquired a grayish color and are semi cooked, (about 10-15 min) remove and grill until fully cooked. (10-15 min)
3. Sautee onions in butter until golden brown.
4. Add cream cheese to buns
5. Add brat and sautéed onions to bun.
6. Enjoy!




9. Chicken Parmesan 



You need:

1. Spaghetti noodles
2. 1 cup Marinara sauce
3. Chicken Breasts
4. 1 cup Panko Bread Crumbs
5. 1/2 cup shredded Mozzarella, Parmesan and provolone cheeses
6. 4 tbsp of flour
7. Salt and pepper
8. 2 large eggs
9. 2 tbsp olive oil
10. 2 tbsp of butter




Directions:
1. Preheat oven to 375 degrees
2. Marinate chicken breasts with salt and pepper.
3.You need 3 separate mixing bowls. In the first one you will put the cup of flower, on the second one just the two eggs (beat until combined) and the third one you put the bread crumbs with the 1/2 cup of parmesan (and mix)
4. Add butter and olive oil to a skillet
5. Dringe the chicken in all three of the bowls and then cook on both sides for 3-4 minutes (It'll still be raw)
6. Remove and place on a plate. Add marinara on top.
7. Place in oil-sprayed cookie sheet and bake for 18-20 min.


Looks long, but once you get the hang of it, it'll be fun, easy and yummy!
